Rarica stands for "root", strong starting point of something new. 100% Sicilian, our olive oil comes from a fascinating land rich in natural beauty and grown by local farmers. You can taste three variants with different intensity produced from three traditional local cultivar: Nocellara del Belice, Cerasuola and Biancolilla.

THE PRODUCTION CHAIN
harvest
Olives are harvested in Autumn, hand-picked as soon as they are ripe. They are carefully selected and placed in perforated boxes to ensure air circulation.
milling and extraction
Milling takes place within 12 hours from the harvest to preserve the polyphenols present in the fresh fruit. It is a cold extraction, at a maximum of 27 degrees.
QUALITY CHECK AND STORAGE
Our olive oil is stored in stainless steel tanks, protected from light and sources of heat. Chemical and organoleptic analysis ensure our product has no defects.
